What’s Makhana?
Makhana (Fox nut) , also known as water lily or lotus plant seeds. Makhana is considered to be a “Super Food”, due to its nutritional value, smooth & crunchy texture, sweet and savoury flavours. Making it an ideal snack to munch on.
Makhana is basically seeds of water lilies or lotus flower plants.
Process: Seeds of water lily plants are harvested in ponds. Makhana harvest takes around 4 to 5 hours to collect seeds one by one from the bottom of pond or river. The harvesting process is labour-intensive and requires skill. The harvesting process begins in the morning at around 10 am and continues until around 3 pm. In some villages, a bamboo pole called kaara is fixed in one place and covered.
The farmers dip in the water and spread out with the long bamboo poles. They pull the seeds with their palms and collect them at the base of the bamboo pole. Seeds collected are washed and cleaned.
Once dried, these seeds are then roasted first, once it has reached an optimum level of heating, the outer shell of the seeds is then hammered with a wooden hammer. As the outer shell breaks, the inner seed pops out like popcorn.
Makhana is usually white in color. Can be had in 3 approximate sizes, namely 4 soota (12 mm), 5 soota (15 mm) & 6 soota (19 mm).
